Nutter Butter Waffles
The internet is bombarded with low carb waffle recipes and I’ve probably tried every one of them with dissatisfaction – they can be dry, eggy, rubbery and bland. I’ve worked to get just the right texture for these breakfast gems; they are light, fluffy, flavorful, and everything you come to expect in a great homemade waffle… not to mention easy to make. Just toss the ingredients into a blender and give it a whirl and pour into a hot waffle iron for a quick breakfast. This recipe makes approximately 8 waffles and if you’re not feeding a family, simply cool waffles and wrap tight in plastic wrap. Freeze for a later meal. Microwave to reheat or toast lightly in the toaster.
Ingredients
4 eggs
½ C. almond or peanut butter
1 T. granulated Splenda®
½ tsp. baking powder
Pinch sea salt
2 T. melted butter
Cooking spray
Directions
Preheat waffle iron.
Place all ingredients in a blender, food processor or beat with electric mixer until blended. Batter will be very thin.
Spray waffle iron, fill waffle iron ¾ full. Bake according to manufacturer directions approximately 1 ½ minutes or until light golden brown.

TIP
Entire recipe makes approximately 8 standard size waffles.
