Peanut Butter Angel Cookies
These peanut butter circles of joy were named for their light, crisp and melt-in-your-mouth texture. If angels could make cookies, I imagine these at the top their list. These cookies also have an interesting and positive testimonial back story to them. If you are rushed and want to get to the recipe, get your scrolling finger out and head there now. If not, this testimonial may make you smile, it did me and still does when I think of it.
During a telephone conversation with a friend from West Virginia, and an invite to visit him, I mentioned that I was in the middle of making sugar free peanut butter cookies and he replied, “how awful must they be”? I reassured him that they were incredible and that I would make him a batch and bring them along on my trip.
My early flight started in Minneapolis where we got held up on the tarmac for nearly an hour before take-off. Sitting next to a United Airlines employee, we began to chat. Neither of us had eaten breakfast before our flight so with a growling stomach I brought out the Peanut Butter Angel Cookies from my carry-on to share with him. He thought they were spectacular and mentioned that his diabetic wife would also likely love them. Off we went to our separate destinations and after 3 more connecting flights, I landed in Parkersburg, WV. Upon arriving to my friend’s home, I realized the container of cookies (or what was left of them) had turned to crumbs. They don’t travel well but is a testament to their delicate texture.
That evening, off to the grocery store we went, making a fresh new batch in his kitchen. The following day he brought them to work for his employees and said they lasted no longer than a few minutes. Score.
A week passed and it was time to leave Parkersburg for Minneapolis. Upon checking in at the United Airlines counter, the service agent took my credentials and giggled as she viewed the computer screen. We were puzzled, what was so funny? She excused herself to retrieve her manager and he giggled the same after viewing the screen. He looked up at me and asked, “Do you have a killer cookie recipe? One of our United Airline employees put a note in your file asking for your recipe upon check-in. Here is his phone number, he’d appreciate it if you could text it to him. He wants to make them as a surprise treat for his wife.”
And so I did. <3 I hope you enjoy them as much as everyone mentioned above did too.
Please note
Splenda granular works best for this recipe; subbing other sugar free granular subs may not work. I keep some Splenda handy just for these cookies. Also, these cookies don’t fair well if overbaked and can quickly become dry to eat; make a note on the recipe to cut the bake time down for the next time.
Ingredients
1 C. creamy peanut butter
1 ¼ C. granulated Splenda®, divided
1 large egg
1 tsp. vanilla extract
Directions
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper; set aside.
Place ¼ C. Splenda® into a bowl for rolling cookies; set aside.
In a medium mixing bowl, add peanut butter, 1 C. of Splenda®, egg and vanilla. Using an electric hand mixer, mix until smooth and blended.
Using a small cookie scoop or tablespoon, scoop batter and roll into a ball between hands making 16 cookies; roll cookie ball in Splenda® to coat and place on baking sheet 2” apart.
Using a fork, press down on each cookie making a criss-cross pattern.
Bake 12 - 14 minutes or until lightly browned.
Let cool on baking sheet a few minutes before removing to cooling rack.
