Chicken, Avocado and Cucumber Salad

This salad makes a great lunch with a unique twist on a chicken salad -- the avocado adds the creaminess in place of mayo, and the cilantro and lime juice give it a punch of fresh flavor.  If you’re looking for a great side salad, omit the chicken and serve with a main meal.
