Ski Slope Soup

The title of this recipe refers to social time with a warm and hearty soup after a cold day of skiing.  There are several different versions of this soup – in this recipe, I use Southwestern flavors that complement fork tender pork.  Simply place all ingredients in a crockpot and forget it for 8 hours!
