Pick-Me-Up Protein Balls
No bake recipe
Made from nut butters, whey protein, crunchy additions and chocolate chips, these protein balls make an excellent snack and provide healthy fats, protein and fiber to stave off hunger and keep blood sugars level. “Chia” means strength, and folklore has it that ancient cultures used the tiny seeds as an energy booster while providing additional healthy fiber.
Ingredients
½ C. peanut butter (no added sugar), room temp
½ C. almond butter (no added sugar), room temp
1/3 C. sugar free maple syrup
1 tsp. vanilla extract
1/3 C. vanilla whey protein powder
1/3 C. unsweetened coconut flakes
1 ½ T. chia seeds
2 pinches sea salt
3 T. Stevia sweetened dark chocolate chips (I use Lily’s®)
Directions
Line a baking sheet with parchment paper; set aside.
Add all ingredients (except chocolate chips) to a large mixing bowl. Using a stand mixer or electric hand mixer, mix until smooth.
Add chocolate chips and stir until incorporated. Refrigerate dough 30 minutes.
Using a small cookie scoop, scoop dough into palms; squeeze and roll into 1 ¼” inch balls. Place on baking sheet and refrigerate 1 hour.
Transfer to an airtight container; keep refrigerated.
Servings: 18 balls
tip:
Refrain from using nut butters with oil floating on top; the protein balls will be too soft and won’t hold together. I use the creamy blended style.
