Pico de Gallo

 

Fresh and flavorful, Pico de Gallo is a perfect condiment to brighten Mexican dishes, casseroles, scrambled eggs, etc.; or, use as a dip for low carb chips and crackers.

Ingredients

1½ C. diced fresh Roma tomatoes

1 C. diced red or yellow onion

2/3 C. chopped fresh cilantro

1 - 2 jalapeño peppers, seeded and finely chopped

Juice of ½ lime, or to taste

Sea salt, to taste

Directions

  1. In a medium bowl, gently combine tomatoes, onion, cilantro and jalapeño.

  2. Remove any seeds from the lime half; squeeze juice over the Pico de Gallo mixture. Sprinkle with sea salt; gently mix to blend in juice and salt.

  3. Taste the Pico de Gallo Salsa; adjust salt, lime, jalapeño or cilantro as desired. Store in a covered container in refrigerator.
