Sausage Chili Con Carne

 

This recipe won first place in a Chili Cook-Off event between friends at a large gathering. The sausage adds rich flavor, the spices give a smoky flavor and the veggies lend a meaty bite in place of beans. Really a great and easy recipe the whole family will love.

Ingredients

1 lb. lean ground beef

1 lb. bulk pork sausage (such as Jimmy Dean®)

1 C. diced green bell pepper

6 cloves garlic, minced

2 T. olive oil

½ tsp. salt

¼ tsp. black pepper

3 T. cumin (regular or smoked)

1 ½ T. chili powder

28 oz. can crushed tomatoes

7 oz. can mild green chiles

1 C. sliced fresh mushrooms

Toppings (optional)

Sour cream

Shredded cheddar cheese

Chopped green or yellow onion

Chopped fresh cilantro

Directions

  1. Heat a large skillet on medium/medium high heat; add ground beef, sausage and garlic; brown. Drain any fat.

  2. Add all ingredients to crockpot; stir to mix. Cover and and cook on low for 6 hours.

  3. Top with a dollop of sour cream and sprinkle with cheese, onion and cilantro, if desired.

TIP

Toppings not included in nutritional info; add if consuming. Ground chicken or turkey and chicken or turkey sausage may be subbed for ground beef and pork sausage.
